Before I tell you about this eat, I must tell you about injera. A ubiquitous staple in Ethiopian food—serving the same purpose as rice in other cultures—injera is a savory pancake made from teff flour. The light brown, hole-dotted flatbread is supple and spongy in texture, and tastes slightly sour from the fermentation process it goes through.
